How can you bake a crispy crust with a glazed stone? The absorption of the clay helps pull out moisture to produce a crispy, crackly crust. This stone looks good, but that's about it.
Brands I'd also recommend: any natural stone baking stone -- not refractory nor glazed

Great stone, produced fantastic pizzas with a crusty bottom, and it cleans easily. Well worth the money. I originally tried a cheap stone, with no glaze for $20.00. It cracked the fist time I used it as it couldn't stand temperatures above 400F. So don't waste your money on anything else than the Emile Henry Stone.
Brands I'd also recommend: Stick with Emile you cant go wrong

The glazed surface is crazed and has small veins so even though it's a glazed surface it still absorbs the moisture from the dough so you get a crispy crust! The best of both worlds, dish washer safe and crispy crust!

Preheat the stone. If you use mushrooms, tomatoes or peppers (high water content veggies) Put them on toward the end, after the crust has set. My pizzas are always crispy and I make thin crusts.
