  • The Yanagiba knife from Shun® is, quite simply, the ideal slicing knife.
  • The yanagiba -- or "willow blade" knife -- has a long, thin blade that includes a traditional Japanese single-beveled edge and hollow-ground back.
  • Features a single-bevel 16º edge making this the sharpest Shun® knife available.
  • The yanagiba is most often used for preparing sashimi, or sliced raw fish, and is excellent for slicing meats and other moist foods as well. It is designed to be pulled through the food as it slices, reducing loss of the natural juices and creating the cleanest cuts imaginable.
  • This yanagiba is also ideally sized for slicing smaller roasts and medium-sized fish.
  • The beautiful graffiti-etched blade is made of pure VG10 steel, a high-carbon steel with added vanadium, which enables it to take and hold an edge longer than other premium steels.
  • The blade design is acid etched into the steel so that it becomes an integral part of the blade, and the wide shinogi (or blade bevel) makes sharpening the knife on a whetstone practically effortless.
