  • The Deba knife from Shun® is a classic Japanese culinary knife.
  • Used most often to process fish and poultry, the Deba knife can be used as both a cleaver and a chef's knife -- useful for beheading and filleting fish, boning poultry, and cutting meat.
  • The beautiful graffiti-etched blade is made of pure VG10 steel, a high-carbon steel with added vanadium, which enables it to take and hold an edge longer than other premium steels.
  • The blade design is acid etched into the steel so that it becomes an integral part of the blade, and the wide shinogi (or blade bevel) makes sharpening the knife on a whetstone practically effortless.
  • The backs of the blades are gently hollow ground, creating an air pocket between the knife and the food being cut, so the knife glides through with quick precision.
  • Comfortable “D" shape Pakkawood® composite handles provide a sanitary, sure grip intended for right hand use.
  • Dishwasher safe, hand washing recommended.
  • National Sanitation Foundation (NSF) approved for professional use.

Best knife I've ever used! I have Wusthof and Henckels knives galore, but I bought this one 4 years ago. It's the sharpest knife I've owned. It sits very well in my hand and the weight is perfectly distributed. You cut things forever with this knife. I would love to throw out all my other knives and replace them with Shun knives!
